Acai bowls are one of our favorite breakfast! It's a perfect way to kickstart the day with natural sugars, but most of all, HEALTHY! We started developing different versions and recipes during this stay at home period and we really like this recipe. It's absolutely delicious and well-balance in sweetness, along with different textures and consistencies: the creaminess of acai puree, the softness of the nectarine chutney, the crunchiness of the granola and cacao nibs.
A must try for a morning kick-start!
Ingredients:
Acai Bowl:
- 2 Frozen Bananas (or room temperature)
- 1 White Nectarine
- 1.5 Cups of Coconut Milk
- 3 Tablespoons of Acai Powder
- 1 Tablespoon of Ground Flaxseeds (optional)
Toppings:
- Grain-free Granola
- Raw Cacao Nibs
- 1 Banana
- 1 White Nectarine
- 1 Teaspoon of Raw Coconut Sugar (optional)
- 1.5 Cups of Water
- Ginger (thumb-size piece)
- 1 Lime
Instructions:
- Blend together the bananas, nectarine, acai powder, ground flaxseeds and coconut milk (add more water if you want to have a liquid consistency).
- Dice the nectarine's pulp and pour it into a saucepan. Add 1.5 cups of water and a thumb-size of freshly grated ginger, 1 teaspoon of coconut sugar and the juice of a lime.
- Cook at medium heat for 5-7 minutes.
- Let it rest for a couple of minutes until it cools down and then blend it until you obtain a smooth and creamy consistency. I would recommend preparing the chutney the day before and let it rest in the fridge for half a day but you can prepare it in the morning as well.
- Pour the acai puree in a bowl and garnish with cacao nibs, grain-free granola, banana slices and nectarine chutney.
